Vegan banana bread

Banana bread always has and always will have a special place in my heart. From the aromatic nostalgic smell to the moist light texture, this recipe is bound to be one of your weekly faves!


  1. Preheat your oven to 170°C (338°F) and line a loaf tin with baking paper. 

  2. To a small bowl, combine the chia seeds with the water and mix to combine well. Set aside for at least 5 minutes to allow the chia ‘egg’ to form. 

  3. To a large bowl, mash the ripe peeled bananas with a fork. 

  4. Then add the melted plant-based butter alongside the sugar and chia egg. Mix to combine well. 

  5. Next, sift in the flour, baking powder & bicarbonate of soda. 

  6. Then drizzle the vanilla extract and soy milk and mix to combine well again. 

  7. Pour the mixture into the prepared loaf tin. 

  8. Top with the walnuts.

  9. Bake for 50-60 minutes, or until a knife goes through the center and is clean.
