Roasted tomato and capsicum coucous salad

This fresh Mediterranean inspired couscous salad combines a flavorful blend of couscous, juicy tomatoes, crisp zucchini, zesty roasted capsicums and eggplant, and freshness from the rocket. Perfect for a light lunch or even as a side dish paired with your favourite protein!

 

Method:
  1. Dice the tomato and slice the zucchini. 

  2. Meanwhile, heat the olive oil in a pan on medium heat. Then add the tomato and sliced zucchini with Italian herbs and salt to taste. Saute for 5 minutes, or until soft and cooked through. 

  3. Cook the couscous in salted water, as per the instructions on the box. 

  4. Once all the ingredients are ready, add the roasted capsicums and eggplant, cooked couscous and sauteed tomato and zucchini to a bowl. Mix to combine well. 

  5. When ready to serve, add the side of the rocket  to the plate.

Note:

  • Pearly couscous, dry - If you are clinically required to be strictly gluten-free, please swap the couscous for quinoa.
