Roasted capsicum pasta

This dish features tender pasta tossed in a rich and savory sauce made with roasted capsicums, garlic, basil and olive oil. Not only is this dish delicious, but it's also easy to make and perfect for a quick side paired with your protein and salad!

Method:

1. Preheat your oven to 220°C (425°F) and line a tray with baking paper. 

2. Meanwhile, cook the pasta in salted water, as per the instructions on the packet. Set aside. 

3. Then slice the capsicums, drizzle the olive oil salt and bake in the oven for 25 minutes. 

4. Meanwhile, in a bowl, add the sauce ingredients and mix to combine well.  

5. Once the capsicums are ready and charred, let them cool, then slice. 

6. Add the cooked pasta, sliced roasted capsicums, fresh basil and drizzle the sauce

  • Whole wheat pasta, dry - If you are clinically required to be strictly gluten-free, please swap the pasta for legume-based pasta or gluten-free pasta.
