Peanut butter crunch balls

These peanut butter crunch bliss balls are a perfect snack to satisfy your sweet tooth and provide a boost of energy. Made with just a few simple ingredients including peanut butter, rice cakes, maple syrup and soy puffs, they are easy to make and delicious to eat. The combination of creamy peanut butter and crunchy cereal creates a satisfying texture that is sure to please. Plus, they are a great option for those with dietary restrictions as they are gluten-free, dairy-free, and vegan. Whip up a batch of these tasty treats and enjoy them on the go or as a midday snack.

Method:
  1. To a medium sized bowl, combine the peanut butter, maple syrup and water. Vigorously mix until a smooth, runny consistency form. 

  2. In the same bowl, crush the rice cakes and add the soy protein puffs. Mix to combine well. 

  3. Using a heaped tablespoon, roll the mixture into equal-sized balls using the palm of your hand. 

  4. Crush your biscuit of choice and sprinkle on top of the peanut butter crunch balls.

  5. Place in the fridge for 2-30 minutes and enjoy!


Note:

  • Peanut butter - If you are allergic or have an aversion to peanut butter, feel free to swap this for another seed or nut butter of your choice. 

  • Maple syrup - You can use honey if you are not vegan

  • Water - This is to help mix the peanut butter and maple syrup. 

  • Corn or rice cakes - If you are clinically required to be strictly gluten-free, please ensure your rice or corn cakes are gluten-contaminated free. 

  • Soy protein crisps/puffs - You may use another 1-2 corn or rice cakes. 

  • Biscoff biscuit - If you are clinically required to be strictly gluten-free, feel free to swap this for a gluten-free biscuit alternative. Alternatively, you can skip this altogether.
