Peanut butter banana bars

A delicious and healthy snack, these peanut butter banana bars are perfect for a midday pick-me-up or as a post-workout snack. Made with only a few simple ingredients, they are easy to whip up and sure to satisfy your sweet tooth!

Method:

1. Preheat the oven to 175°C (350°F) and line a loaf pan with baking paper. 

2. To a medium sized mixing bowl, combine the mashed banana, maple syrup, soy milk and peanut butter. Mix to combine well.

3. Then add the baking powder and fold in the dairy free dark chocolate.

4. Pour into the lined loaf pan and bake for 20-25 minutes. It should be gooey and moist in the middle. 

 

Note:

  • Rolled oats - If you are clinically required to be strictly gluten-free, please swap the oats for either quinoa flakes or amaranth.

  • Maple syrup - You can use honey if you are not vegan. 

  • Dairy-free chocolate chips - Preferably 70% and over, but ensure it is milk solid free.
