Incredible hulk pasta

What do you get when you combine your love for pasta with nutrient dense, healthy ingredients? Introducing the incredible hulk pasta that not only tastes divine (of course), but too is loaded with 5mg or iron & 18g of protein!

 

Method:

1. Cook the pasta in salted water, as per the instructions on the box. 
2. Add the raw cashews and boiled water to a high-speed blender. Allow the cashews to sit and soak for 5 minutes to soften and then blitz.
3. Then add the soy milk, spring onion, spinach, nutritional yeast and garlic salt to taste. Blitz on high until a smooth and creamy texture forms. 
4. Once the pasta is cooked, add the sauce and mix to combine well.

 

Note

  • Whole wheat pasta, dry -  If you are clinically required to be strictly gluten-free, please swap the pasta for legume-based or gluten-free pasta.
  • Vitasoy soy milk -  If not using this brand, please ensure the milk is calcium-fortified and contains 120 mg of calcium per 100ml. Moreover, suppose you are allergic or prefer different plant-based alternatives. In that case, you can always use another type of milk, given it is calcium-fortified.
