Method:
  1. Heat a medium sized pan on low to medium heat. 

  2. Slice the bananas into coins and set aside.

  3. Drizzle the olive oil and add the banana coins to the pan. 

  4. Sprinkle the cinnamon and pan fry for 2-3 minutes or until crispy and brown. 

  5. Flip the banana coins and repeat. 

  6. Meanwhile, toast your bread and butter with the peanut butter.

  7. Top with the caramelised banana coins, and enjoy!


Note:

  • Peanut butter - If you are allergic or have an aversion to peanut butter, feel free to swap this for another seed or nut butter of your choice.
  • Herman Brot high protein bread - This is optional as the higher protein option; otherwise, you can use sourdough or whole grain bread. Additionally, if you are clinically required to be strictly gluten-free, please swap the bread for gluten-free bread.
