Smashed chickpea sandwiches

Trust me, while this may look like a simple sandwich, it’s not only loaded with flavour; it’s packed with fibre, protein and B vitamins. A quick and easy lunch that will take 10 minutes to prep the night before or the morning of your day's activities!


1. Rinse and drain the chickpeas, set aside. 

2. To a bowl, combine the chickpeas with the remainder of the smashed chickpeas ingredients. Mash well with a fork.

3. Toast your bread or alternatively have fresh with the hummus.

4. To serve, add the spinach followed by the smashed chickpeas.
