Mocha overnight wheetbix

Calling all the coffee lovers, this one is for you. With the bitterness from the cocoa, creaminess from the protein, sweetness from the strawberries and nuttiness from the peanut butter, trust me when I say this may be your new favourite overnight brekky recipe. 

Method:
  1. Combine the crushed Wheetabix, hemp seeds, cocoa powder, protein powder, and calcium-fortified soy milk in a bowl. 

  2. Refrigerate for at least 3-4 hours or conveniently overnight.

  3. When ready to eat, top with fresh strawberries and peanut butter!

Note:

  • If you prefer stove-cooked oats instead of overnight oats, by all means, go ahead! It all comes down to personal preference.
  • Weetabix biscuits - If you are clinically required to be strictly gluten-free, please swap the Weetabix for either quinoa flakes, amaranth or gluten-free weetabix. Alternatively, if you prefer, you can use oats.  
  • Macro Mike protein powder - For this recipe, I used the iced mocha latte almond protein, however, any flavour will do well too. This is optional as a higher protein option. Alternatively, if you want to emulate the taste still, use ½ tsp of dried coffee beans, or if you have an aversion to coffee, swap this for another heaped Tbsp of cocoa powder. 
  • Dutch cocoa -  This cocoa powder is utilised for its rich and decadent taste. You can alternatively use the cacao powder if you prefer. 
  • Vitasoy soy milk - If not using this brand, please ensure the milk is calcium-fortified and contains 120 mg of calcium per 100ml. Moreover, suppose you are allergic or prefer different plant-based alternatives. In that case, you can always use another type of milk, given it is calcium-fortified.
